Naturally fermented green olives, mainly of the Mission or Manzanilla cultivars, prepared in the Spanish-style, meaning it has undergone a lye treatment before brine-curing.

FLAVOUR PROFILE

Unlike the Greek-style Black Olives, the Spanish-style Green Olives are much firmer and crisp in texture. They are salty, but with a hint of bitterness. This does not at all subtract from the lovely green, fruity notes.

Our Spanish-style Green Olives’ texture and light, fruity taste will keep you coming back for more. Use as part of tapas or a snack for the rugby game – it’s much healthier and tastier than potato chips and it pairs wonderfully with a lean biltong such as Springbok or Kudu.

In a country that has as a type of olive for almost every day of the year, how do you know which one to choose? In reality, you don’t always have a choice. If you’re going to be buying your Egyptian olives in bulk, there are a few you should look out for.
According to the method of preparation
(1) Spanish style
Green Olives are harvested by hand, so as to avoid injuries to the fruit; once collected they receive a short alkaline treatment to neutralize the bitter oleuropeine acid from the unripe fruit and then they are put into brine where a slow natural lactic fermentation (from 2 to 3 months) occurs and the bitterness of the fruit is mostly eliminated; finally they are desalted and prepared in our special way delivering a unique, delicious, nutritive and healthy product in different types of package according to the customer’s request.

(2) Water /salt style ( Egyptian traditional method )
Green Olives are harvested by hand, so as to avoid injuries to the fruit; once collected they are treated by saline solution at certain concentration (10-12% NaCL)
And saved in our stores for 3-4 months until suitable for oxidation process

Green olives could be prepared in many shapes like:
(1) whole green olives
(2) pitted green olives
(3) sliced green olives
(4) stuffed green olives with Carrot/ red pepper /garlic /almond

The size of the green olives differ from type to other and they start from 81 piece in kg up to 400/kg as the following
81-100/kg
101-120/kg
121-140/kg ………………….etc,
